Meal Plan / Week 6 May 2019

We’ve got every meal covered this week. Enjoy our beautiful Fresh Artichoke Frittata for breakfast; celebrate another #tacotuesday with Vegan Chipotle Jackfruit Tacos for dinner; bring leftover Thai Curry Veggie Noodles with Chicken to work for lunch; and snack on sweet, sugar-free N’Oatmeal cookies. You’ll find turkey, chicken, pork, vegetarian, and vegan recipe options; all without sugar, dairy, or wheat!

Fresh Artichoke Frittata

Saturday – We love frittatas because they are so easy and versatile. This Fresh Artichoke Frittata is a little more complex than most, as it has two distinct prep stages – cooking the fresh artichokes, and then creating the egg mix. Prepping fresh artichokes takes longer than cracking open a can of artichoke hearts, but the results are totally worth the effort!

Alaska Burger Salad

Sunday – Hidden in the center of this moist Alaska Turkey Burger is a chunk of our favorite Violife “Just Like Mature Cheddar” cheese. Cool tomato, cucumber, and avocado slices accompany the hot burger atop a bed of lightly dressed greens.

Thai Curry Veggie Noodles with Chicken

Monday – Thai Curry Veggie Noodles with Chicken is a Whole30 recipe that’s light, flavorful, and colorful; the cool veggies and slightly spicy dressing are a perfect complement to hot grilled chicken.

Chipotle Jackfruit Vegan Tacos with Purple Slaw

Tuesday – Another Tuesday, another delicious taco recipe! These spicy vegan Chipotle Jackfruit Tacos feature jackfruit, diced potatoes, and New Mexico Chili powder. The Purple slaw is slightly sweet from balsamic vinegar, and slightly smoky from paprika; it’s a great cool, fresh side to these spicy tacos.

Chili-Rubbed Pork Chops

Wednesday – These lean Chili-Rubbed Pork Chops are FODMAP-friendly and not too spicy. They taste great with Ricolicious and fresh tomato salsa.

Slow Cooked Indian “Butter” Chicken

Thursday – This Slow Cooked Indian “Butter” Chicken recipe is one of our family favorites; it’s on permanent rotation in our meal plans.

N’Oatmeal Cookies

Sweet Snack – We love this N’Oatmeal Cookies recipe from the Whole Life Challenge. We replaced the butter with 1/2 cup unsweetened applesauce and 1/4 cup almond butter, and left out the 1/2 cup chopped dates. These are so delicious, we promise you won’t miss the sugar!

Skinny Potato Wedges

Bonus side – Once you learn the basics of making these roasted Skinny Potato Wedges, you won’t want to go back to store-brought freezer fries.
