Thai Curry Veggie Noodles with Chicken

We do not follow the Whole30 Program, but we found this recipe in the Food Network archives and it sounded delightful. It’s light, flavorful, and colorful; the cool veggies and slightly spicy dressing are a perfect complement to grilled chicken. A plus: spiralized cucumber is crisp and festive!

We prepped the veggies at home and then brought the chicken and dressing ingredients with us to a friends house. While the chicken received a perfect char on the grill, we prepared the sauce and finished the recipe. It was an easy meal to prep in one location and complete in another.

If you don’t have a spiralizer, we have a tip to share with you. If you already have a Kitchen-Aid stand mixer, we recommend you consider a spiralizer attachment. There’s really no reason to purchase another standalone appliance for your kitchen, especially if you have a small space (like us).
