S’mores Pizza

Last weekend, my husband asked our boys to take some time and write down 50 things they each wanted to do this summer. Mixed in with the obvious responses such as play a lot of Minecraft, sketch, and play Legos were some crazy ideas like skydive, make a sharknado, and hire a secretary. Their brainstorms each included ideas that fell in a sweet spot between typical and far-fetched – carve wood, publish a book, nature walk.

They each included a few food-related projects – bake a 7-layer cake, carve a cheese sculpture, and make ice cream. One of my favorite food-related ideas, S’mores Pizza, came from my younger son. We decided to tackle this first, as the kick-off to a summer he hopes is filled with campfires and roasted marshmallows. He and I worked together to define the individual components in the terms of his favorite pepperoni pizza – the dough, the sauce, the cheese, and the meat topping – but with a sweet treat in mind.

We had so much fun working on this together, and while the end result looked very much like a meaty pizza, both of my sons and my husband agreed it tasted like a sophisticated S’more. All three gave this a thumbs-up, and would love to make it again!

S’mores Pizza

Here’s a fun summer treat – classic campfire dessert engineered as a pizza! Dough, Sauce, Cheese, and Pepperoni by way of Graham Cracker Cookie Dough, Raspberry Fudge Sauce, Marshmallow Creme Cheese,  and Chocolate Pepperoni. So much fun to make with your family or friends!

Ingredients

Graham Cracker Cookie “Crust”

  • 1 cup ground graham crackers approx 7-8 sheets
  • 1 1/4 cup all-purpose flour
  • 3/4 cup unsalted butter softened
  • 2 tbsp cane sugar
  • 2 tbsp brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1/2 tsp Kosher salt
  • 1/2 tsp baking soda

Raspberry Fudge “Sauce”

  • 1 cup frozen raspberries
  • 2 tbsp cane sugar
  • 1 tbsp water
  • 2 oz semi-sweet chocolate chips
  • 1/4 cup heavy whipping cream
  • 1/2 tsp vanilla

Marshmallow Creme “Cheese”

  • 18 marshmallows
  • 1/2 cup heavy whipping cream
  • 1/2 tsp vanilla

Chocolate “Pepperoni”

  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup coconut oil

Instructions

Graham Cracker Cookie “Crust”

  • Preheat your oven to 375 degrees F. Line a baking sheet with parchment paper.
  • In a stand mixer, use the paddle attachment to beat the butter and sugars until creamy; add egg and vanilla and continue mixing until smooth. 
  • Sift the dry ingredients together in a medium bowl; add the dry ingredients to the wet in 3-4 batches, mixing continuously until combined.
  • Transfer the dough to the prepared baking sheet, using your hands to shape the dough into a large pizza size. 
  • Bake in the oven 10-15 minutes, until golden brown on the outside and cooked through in the middle. Set aside to cool.

Raspberry Fudge “Sauce”

  • Combine raspberries, sugar, water, and chocolate in a medium saucepan, and bring to a boil on medium-high heat until the berries cook down, stirring constantly.
  • Stir in the whipping cream and vanilla until smooth.
  • Remove from the heat and set aside to cool.

Marshmallow Creme “Cheese”

  • Using a double boiler, fold the cream into the marshmallows and stir continuously until the marshmallows are almost completely melted.
  • Add the vanilla and stir until blended. Remove from the heat.

Chocolate “Pepperoni”

  • Using a double boiler, stir the ingredients together until melted. 
  • Dollop out pepperoni sized dollops of melted chocolate onto a small baking sheet lined with waxed paper, and place in the freezer for 3-5 minutes to quicken hardening.
  • Make the pizza – first, transfer the Graham Cracker Cookie Crust to a cutting board. 
  • Ladle Raspberry Chocolate Sauce over the Crust, spreading as you would pizza sauce. 
  • Next, pour Marshmallow Creme Cheese over the surface, allowing some to drip close to the sides of the crust. 
  • Finally, place Chocolate Pepperoni’s all over, just like on a pepperoni pizza. Use a pizza cutter to create 8 slices, and enjoy!
